Oven Roasted Sweet Potato Tacos with Chipotle Veganaise Dressing Recipe:
2 medium sweet potatoes, peeled and chopped into small cubes
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon paprika
Salt and pepper, to taste
1/2 cup Veganaise
1 chipotle pepper in adobo sauce, finely chopped
1 tablespoon adobo sauce (from the chipotle pepper can)
Juice of 1 lime
Fresh avocado slices
6-8 plant-based pea protein tortillas
