Savory and Satisfying: Sourdough Shrimp Toast with Avocado and Soft-Boiled Egg

Here at Sunshine Paradise Retreat we encourage you to get creative in the kitchen. Sometimes you just take the ingredients in your kitchen and start cooking! That is how we came about this delicious shrimp toast snack that is so tasty and healthy!

Here is a recipe for sourdough shrimp toast that serves 2:


  • 2 slices of sourdough bread

  • 6-8 large shrimp, peeled and deveined

  • 1 ripe avocado, sliced

  • 2 eggs

  • 2 tablespoons of Veganaise

  • 1 tablespoon of olive oil

  • Salt and pepper to taste


  1. Preheat a non-stick skillet over medium heat with a tablespoon of olive oil.

  2. Add the shrimp to the skillet and season with salt and pepper. Cook the shrimp for 2-3 minutes on each side until they're pink and cooked through.

  3. While the shrimp are cooking, boil the eggs for 6-7 minutes until they're soft boiled. Then, peel and slice them.

  4. Toast the sourdough bread slices until they're golden brown.

  5. Spread a tablespoon of Veganaise on each slice of toast.

  6. Top each slice of toast with slices of avocado.

  7. Once the shrimp are cooked, add them on top of the avocado slices.

  8. Add the sliced soft boiled eggs on top of the shrimp.

  9. Season with salt and pepper to taste.

  10. Serve and enjoy your delicious sourdough shrimp toast!
