Try This Delicious and Healthy Vegan Salad: Herbed Quinoa with Red Wine Vinaigrette

If you're looking for a delicious and healthy vegan salad, look no further! I just made a new salad that I'm absolutely in love with, and I'm excited to share it with you. This salad is made of all organic ingredients and low calorie, so you can feel good about what you're putting into your body. The base of the salad is herbed quinoa, which is a great source of protein and fiber. To give the salad some extra flavor, I added a herb salad mix on top. To make the dressing, I combined red wine vinegar, olive oil, and some herbs and spices in a bowl. I love making my own dressings because I can control the ingredients and adjust the flavors to my liking. This dressing is tangy and flavorful, and it really complements the herbs in the salad. To finish off the salad, I sprinkled some sunflower seeds on top for some added crunch and nutrition. Sunflower seeds are high in healthy fats, protein, and vitamin E, making them a great addition to any salad. And last but not least, I added some fresh avocado on top. Avocado is rich in healthy fats, fiber, and a variety of vitamins and minerals, making it a great addition to any vegan salad. Overall, this salad is a delicious and healthy option for anyone who loves fresh, organic ingredients. It's easy to make, and it's packed with nutrients and flavor. If you're looking for a new vegan salad to try, I highly recommend giving this one a go!

Here's the step-by-step recipe for the vegan salad with herbed quinoa, red wine vinaigrette, sunflower seeds, and avocado:

For the salad:

  • 1 cup quinoa

  • 2 cups water

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • 1 teaspoon dried basil

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 bag of herb salad mix

  • 1 ripe avocado, diced

  • 1/4 cup sunflower seeds

For the dressing:

  • 1/4 cup red wine vinegar

  • 1/4 cup olive oil

  • 1 tablespoon dijon mustard

  • 1 teaspoon honey

  • 1/2 teaspoon dried oregano

  • 1/2 teaspoon dried basil

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  1. In a medium saucepan, bring 2 cups of water to a boil. Add quinoa, oregano, thyme, basil, salt, and pepper. Stir, cover, and reduce heat to low. Simmer for 15-20 minutes, or until the quinoa is cooked through and all the water has been absorbed. Fluff the quinoa with a fork and set aside to cool.

  2. While the quinoa is cooking, prepare the dressing. In a small bowl, whisk together the red wine vinegar, olive oil, dijon mustard, honey, oregano, basil, salt, and black pepper until well combined.

  3. Once the quinoa has cooled, add the herb salad mix to a large mixing bowl. Pour the dressing over the salad and toss well to coat.

  4. Add the cooled quinoa to the salad and toss gently to combine. Divide the salad among serving bowls.

  5. Top each bowl with diced avocado and a sprinkle of sunflower seeds.

  6. Serve and enjoy!

This vegan salad is not only delicious and nutritious, but it's also easy to make and perfect for a healthy lunch or dinner option.
