Oven-Baked Chickpea Tofu McNuggets: Crispy and Healthy Delights


Introducing our Oven-Baked Chickpea Tofu McNuggets – a delightful and healthier twist on a beloved classic. Inspired by the desire for a plant-based alternative that captures the crispy, golden goodness of traditional McNuggets, this recipe combines the robust flavors of extra firm chickpea tofu with a hint of Dijon mustard and almond milk. Baked to perfection, these nuggets are not only a delicious treat but also a wholesome choice for those looking to enjoy the familiar taste of nuggets without the guilt. Whether you’re following a vegetarian or vegan lifestyle or simply seeking a nutritious snack, these nuggets offer a tasty solution that’s bound to satisfy cravings.


Ingredients:

• 14 ounces extra firm chickpea tofu (drained and pressed)

• 1 tablespoon Dijon mustard

• 1/4 cup unsweetened plain almond milk

• 1/4 cup + 2 tablespoons nutritional yeast

• 1/4 cup potato starch

• 1/4 teaspoon garlic powder

• 1/2 teaspoon onion powder

• 1/4 teaspoon cumin

• Salt and pepper to taste

• Olive oil for baking sheet

Instructions:

1. Prepare the Chickpea Tofu and preheat oven to 400 degrees F:

• Start by draining and pressing the extra firm chickpea tofu to remove excess moisture. You can do this by wrapping the tofu in a clean kitchen towel or paper towel and placing a heavy object (like a cast-iron skillet) on top for about 10-20 minutes.

2. Cut into Nuggets:

• After pressing, cut the chickpea tofu into bite-sized nugget shapes. You can make them as small or large as you like.

3. Prepare the Coating:

• In a mixing bowl, combine the Dijon mustard and unsweetened plain almond milk. Mix well until it forms a smooth liquid.

4. Prepare the Dry Coating:

• In a separate bowl, mix together the nutritional yeast, potato starch, garlic powder, onion powder, cumin, salt, and pepper. This will be your dry coating mixture.

5. Coat the Nuggets:

• Dip each chickpea tofu nugget into the wet mixture (Dijon mustard and almond milk) to coat it evenly.

6. Coat in Dry Mixture:

• After dipping in the wet mixture, roll the nugget in the dry coating mixture until it’s thoroughly coated. Ensure each nugget is evenly coated with the dry mixture.

7. Repeat for Extra Crispiness:

• If you want extra crispy nuggets, you can repeat steps 5 and 6 to double-coat the nuggets.

8. Bake:

• Place the coated nuggets on the prepared baking sheet. Bake them in the preheated oven for 20 minutes. After 20 minutes, flip the nuggets over and bake for an additional 20 minutes or until they are golden brown and crispy.

9. Serve Warm, but let cool for about 5 minutes.

• Serve your chickpea McNuggets while they’re still warm. They can be enjoyed with your favorite dipping sauces. We love ketchup with these.


These baked chickpea McNuggets are a healthier alternative to the fried version and are just as delicious. Enjoy!
