Recipe


Plant-Based Tahini Slaw Salad with Baked Tofu and Buffalo Cauliflower Broccoli Stir Fry


Ingredients for two servings:


• 1/2 head of purple cabbage, thinly sliced

• 3 cups arugula

• 3 green onions, finely chopped

• 1 cup baked tofu, cubed (pre-made tofu from reputable brands such as Trader Joe’s can be used)

• 1 stalk broccoli

• 1/2 head cauliflower

• 4 tablespoons buffalo hot sauce (adjust to taste preference)

• 2 tablespoons olive oil

• Juice of half a lemon

• 2 tablespoons unsalted tahini

• 4 tablespoons cold water


Directions:


For the Stir Fry:


1. Cut the broccoli and cauliflower into bite-sized pieces.

2. Heat a skillet over medium heat for a few minutes before adding olive oil.

3. Add olive oil to the pan and let it heat for a minute.

4. Toss the tofu, broccoli, and cauliflower with buffalo sauce.

5. Add the tofu, broccoli and cauliflower mixture to the pan along with a few splashes of water and let it sear for 5 to 10 minutes, stirring occasionally, until desired tenderness is achieved.

6. Proceed with making the salad while the stir fry cooks.


Tahini Dressing:


1. In a bowl, combine 2 tablespoons of tahini, lemon juice, and 3 tablespoons of cold water (add more water if needed).

2. Whisk together until desired consistency and flavor are achieved.


Slaw:


1. In a large mixing bowl, combine the purple cabbage, arugula, green onions, baked tofu, and tahini dressing.

2. Toss gently to combine all ingredients evenly.


Assembly:

Once the stir fry is cooked, arrange it alongside the slaw on a serving plate.

Serve and enjoy!
